Happy Pi Day, Substackers!!
How’s everybody doing?
Today, I wanted to share this fun, easy dessert recipe with you all in honor of Pi(e) Day. It’s SO easy to make, only uses a few ingredients, and is pretty healthy since I used yogurt. I used DAH! strawberry lassi for this pie because it’s super thick and creamy!
This recipe is also super kid-friendly. A young one can easily get involved in almost every step of the process. Just be careful for little fingers near a food processor blade or an errant rolling pin when you’re crushing the graham crackers. The hardest part of this recipe is the waiting!
Hope you enjoy this easy dessert!
Recipe: Berry Cream Pie
Ingredients:
1 homemade or store-bought graham cracker pie crust
1 32 oz. bottle of DAH! strawberry lassi
1-2 cups of assorted berries of your choice, for decorating (I used blackberries, raspberries, and blueberries because those are what looked best at the market)
For Pie Crust:
1 ½ cups graham crackers, crushed into fine crumbs
6 tablespoons unsalted butter
1 tablespoon white sugar
Directions:
To make pie crust, first crush the graham crackers. You can use a food processor or do this by hand. If you’re using a food processor, pulse the graham crackers until you get fine crumbs. Or you can crush them by hand by placing the crackers in a heavy-duty plastic bag. Seal the bag well and roll over the graham crackers with a rolling pin until they are broken down into fine crumbs.
Then mix the crushed graham crackers, butter, and white sugar together in a large bowl. If using a food processor, pulse until combined. Next, spread the graham cracker mixture into evenly onto the bottom of your pie plate. Using your fingers, press the mixture all over the sides all around the pie plate then into the bottom of the plate.
When the crust is even and compact, gently cover with plastic wrap and chill in the freezer for 15-30 minutes or in the fridge for 1-2 hours before using.
After the pie crust has chilled, pour in your bottle of DAH! Strawberry Lassi into the crust.
Next, decorate the top of your pie with berries. You can arrange them in a beautiful pattern or just dump them in, up to you!
Chill your pie in the freezer for up to 8 hours or overnight. Slice and serve! One note: If you have leftovers of this pie, be sure to put it right back into the freezer if you don’t finish the whole thing so it doesn’t melt and fall apart.
Love,
